25 years ago, Tom Proch found his way to Nantucket in the same manner that Michael had. He was young and hungry to learn. Meeting Michael and working with him taught him the techniques that are required to become a world class chef. The techniques that he learned were matched by his talent to expedite a product that is delicious and consistent. He took over nightly operations of The Club Car kitchen over 10 years ago and the restaurant has not missed a beat since. His dedication to his staff and to his cuisine have made him on of the most respected and liked chefs on the island. Tom lives in Madaket with his wife Pauline and two children-Michael and Sophie.
